Ingredients
- 2 lbs. Fish (of your choice)
- 2 tbsp. lemon juice
- 4 tbsp. Stewed Cabbage (Multi-Purpose) Spice
- ¼ bottle Hey Mon Caribbean Cooking Magic Barbeque Sauce
- ¼ bottle stick of margarine
- 1 medium onion
- 4 carrots (sliced)
- 4 celery stalks (chopped)
- 2 cups of hot water
- 2 tbsp. tomato paste
- 2 tbsp. lime juice
- ¼ bottle Hey Mon Caribbean Cooking Magic Private Stock Hot Pepper Sauce (optional)
Cut fish into diagonal 4 inch slices if whole or
6 inch horizontal slices if fillets. Put fish into a pot of cold
water (water must cover fish) with lemon juice and allow to sit
for 15 minutes. Drain water and sprinkle fish with dry spices.
In a 2 qt. sauce pan add margarine, onions, carrots, pepper, and
celery. Sauté vegetables and let simmer 3 minutes stirring
occasionally. Add all sauces and pastes along with hot water.
Bring to a boil, cover and let simmer for 5 minutes, and then
add fish. Cook for another 5 minutes and you have Fish Creole.
Great over rice and excellent as a soup.
