Ingredients

Cut fish into diagonal 4 inch slices if whole or 6 inch horizontal slices if fillets. Put fish into a pot of cold water (water must cover fish) with lemon juice and allow to sit for 15 minutes. Drain water and sprinkle fish with dry spices. In a 2 qt. sauce pan add margarine, onions, carrots, pepper, and celery. Sauté vegetables and let simmer 3 minutes stirring occasionally. Add all sauces and pastes along with hot water. Bring to a boil, cover and let simmer for 5 minutes, and then add fish. Cook for another 5 minutes and you have Fish Creole. Great over rice and excellent as a soup.
